Cinnamon Bread

Fresh from the oven what could be more lovely for a holiday breakfast than the spicey taste of cinnamon bread.

This is a family favorite.  It is a simple recipe for a delicious
treat.  It’s also a great way to sneak a little extra fruit into your
kids diet.  Just add a diced apple or some raisins.

Use your imagination.  You can also bake muffins instead of bread.

INGREDIENTS

1 large package of instant vanilla pudding
1 cup of sugar
1 cup of oil
3 eggs
1 cup of milk
1 1/2 teaspoon of baking powder
2 teaspoons of cinnamon
1/2 teaspoon of baking soda
1 teaspoon of vanilla
2 cups of flour

DIRECTIONS:
Preheat the oven to 325 degrees.

In a large mixing bowl, mix the sugar and pudding mix.

Slowly add the oil.  Mix well.

Slowly add the eggs and milk.

Stir in the baking powder, cinnamon, soda, and vanilla.
Scrape the sides of the bowl.

Stir in the flour.

Grease and flour two loaf pans.

Divide the bread dough between the two pans.

Sprinkle the tops with extra cinnamon sugar.

Bake for 60 minutes until edges start to brown and a toothpick inserted into the middle comes out clean.

For muffins bake at 350 degrees for about 20 minutes.
